- 200g plain flour
- 1/2 tsp sea salt flakes
- 1/2 tsp dried chilli flakes
- 150g extra mature Cheddar cheese, grated
- 150g unsalted butter, chilled and diced
- 1 whole medium egg, plus 1 egg yolk
3 baking trays, lined with greaseproof paper
- Put the flour, salt, chilli flakes and cheese into a food processor and pulse until just combined.
- Add the diced butter and pulse until coarse sand appearance.
- Add the whole egg and the yolk and pulse until a firm dough.
- Turn out onto a floured surface and shape into a log. Bang down to eliminate any air pockets.
- Roll the dough until it forms a 50cm long cylinder, with your hands.
- Cut into 3, then wrap in greaseproof and chill for 30 minutes (can be frozen at this stage).
- Preheat the oven to 200C/400F/gas 6.
- Cut the dough into 1cm slices and arrange on the baking trays.
- Bake for 10 to 12 minutes until lightly golden.
