Seriously - everyone adores these muffins.
- 125g butter
- 115g ground almonds
- 200g icing sugar, sifted
- 115g plain flour, sifted
- 1/2 tsp baking powder
- 5 egg whites
- 150g strawberries/blueberries
- Melt the butter and cool.
- Mix the almonds, sugar, flour and baking powder.
- Stir in the egg whites and butter.
- Fold in 2/3 of the berries.
- Pour into the muffin moulds and sprinkle over the remaining berries.
- Bake at 180C for 20-25 minutes.
